Our local produce store in Axminster has been set up as an everyday alternative to the supermarket but of course there is more to it than that. We have sourced locally made interesting products that you may find are not widely available. As well as the fantastic fresh produce for sale we have a few items we can send out and due to popular demand we have decided to offer a few of these for sale. This range will be expanding as we discover more quality products locally and of course, there is far more to see in the Axminster Store itself!

These cute salt pinch pots are the creation of our friend Nick Hillyard. Nick has been a potter for 25 years, along with teaching pottery in local colleges.  He is the maker of our much loved River Cottage mugs.

His designs are beautiful and highly intricate, influenced by Oriental and European folk pottery. The decoration is hand carved Sgraffito slipware, achieved without stencils or patterns. Nick is a very popular local potter whose work is exhibited in various West Country galleries as well as at Liberty's in London.

 The design incorporates the River Cottage Logo, in blue, and they are approximately 750mm diameter and 450mm deep.

 We are also offering the pinch pot with a 225 gram of Cornish Sea Salt and save £1.00 of the RRP

 Cornish Sea salt crystals of great purity that melt in the mouth and add real flavour intensity to the things you love to eat. Cornish Sea salt offers more taste for less salt, making it a healthier alternative to traditional table salt.


The salt is harvested from the clear sea water off the coast of Cornwall - from the Atlantic ocean. Nature’s ultimate renewable resource. The sea water is extracted at 3.5% saturation, we take only 0.5%, and return sea water from where it came, at a saturation of 3.0%. This simple hand-harvest process, working with nature, results in brilliant white flakey sea salt crystals with more than sixty naturally occurring trace elements essential for well-being. The crystals crumble easily between the fingers, and they taste great too!

Cornish Sea Salt is the preferred salt of the River Cottage chefs.

This year's TV programme, “River Cottage Spring” has a big drive to encourage everyone to eat well at home by getting back in to the kitchen and do some traditional home cooking and to grow and harvest produce from the garden, and we think we've come up with a really nice way to get you started.  Even if you are a complete novice gardener with just a small balcony or a nervous chef that has only ever re-cooked, and burnt a hard-boiled egg, we can help you get started! We have selected a range of products to get you in the mood and packed them in to one of our River Cottage Hampers.

What could be better than some home-made organic bread made to a recipe from the team and spread with some delicious Devon honey? Amongst the many delights for the gardener, we have selected some seeds from Tamar Organics to grow herbs and salad crops using your own pots made out of recycled newspapers, and other gardening items to help your seedlings on their way. All British or FSC certified of course.

Just the thing for a River Cottage fan, we feel these great products would appeal to your friends too as an introduction to River Cottage and our ethos. The perfect thank you gift or house warming present, it will spur you on to get out there and start growing your own.

Mix Quick Yeast into the flour in your recipe before adding the liquid. Use 4 tsp of Quick Yeast to 1.5kg of strong bread flour.

 

And to get you going here's a recipe taken from our new bread book (release date February 2009)

 

 

Flatbread

 

Makes enough to seriously impress about a dozen

 

500g plain flour, plus extra for dusting

500g strong white bread flour

325ml natural yoghurt

325ml hot water

1 sachet yeast

20g salt

2 tbsp good olive oil, plus extra for later

 

Combine the yoghurt and water, then mix everything together.  Knead this dough until smooth and silky.  Oil it, cover it and leave to rise until doubled in size.  Deflate the dough, then if you have time, leave to rise a second, third, even a fourth time (this improves the dough but is by no means essential).  Now tear off pieces the size of small lemons (or smaller, or larger, you choose).  One at a time, shape them into rounds then, using plenty of flour, roll out to 3 or 4mm thick. Leave each one to rest for 5 minutes or so – this improves the finished bread dramatically.  Meanwhile heat a large, heavy-based frying pan over the highest heat and set the grill to maximum.  When the pan is super-hot, lay the first bread in it.  After maybe a minute, possibly sooner, the bread should be puffy and starting to char on the bottom.  Slide the pan under the raging grill, a good six inches from the heat, and watch your creation balloon magnificently.  Remove when charring on the top, slip a lick of olive oil over, and feed your awe-struck friends, with some stuff to dip it in.  Repeat ad finitum.

Both of our kitchens at Park Farm and at the Axminster Canteen use these beautiful beech chopping boards.

 

These boards are made locally by our friend Mike and customers on events often asked if they were available to buy!

 

The boards are all made from English Beech and handcrafted in Mike's Chideock workshop.

We have three types of boards available, two sizes of the smooth edged beech chopping boards and the popular rough edged rustic look chopping board.

 

We use them both for presentation and for chopping on. The small chopping board is ideal for canapes and the larger board is ideal for bread.

The smaller smooth edged chopping board measures approximately 23cm x 16cm whilst the larger is approximately 38cm x 23cm. They have cut outs at each end to make carrying easier.

 

   

The rough edged chopping boards are ideal for presentation of food when you are looking for that rustic look and are sturdy enough to use as a cutting surface.  The dimensions are approximately 40cm by 25cm although as they are made with rustic edgings these do vary slightly.  The boards have cut out handles at each end to make it easy to use as a tray or presentation.

Please note that to achieve this look two pieces of wood are joined and glued together, we therefore recommend that they are not cleaned in a dishwasher.
