"Many of Britain’s most abundant, sustainable - and delicious - fish have been absent from our tables for far too long. There’s never been a better time to discover and celebrate these neglected species, both for their own merits, and, crucially, to take the pressure off their more popular relatives, threatened by destructive and overly-intensive fishing methods.

In the new book, our mission is to empower you, the consumer, to make choices which will genuinely help to reverse the decline in our native fish stocks - and, of course, to make some seriously exciting culinary discoveries along the way."

Hugh

Hugh Fearlessly Eats It All

Hugh Fearlessly Eats It All

New release in paperback

In this hugely enjoyable collection, Hugh Fearnley-Whittingstall - the man who brought you placenta canapés and brains on toast - chomps his way through the edible, the delectable, and the plain indigestible

For almost two decades, 'Hugh Fearlessly-Eatsitall' has been writing about food in all its guises. To some, his concept of 'good eating' might seem a bit skewed - he'd always bypass a McBurger in favour of a squirrel sandwich, and make a detour for fresh road kill - but to others he is a shining and shaggy beacon of good sense in a food world gone mad.

Armed with a broad mind, a quick wit and a ready appetite, Hugh covers almost every area of global food culture. Whether singing the praises of offal; debunking Colonel Sanders and Dr Atkins; playing 'poisson roulette' with the deadly fugu fish in Tokyo; pondering the moral inconsistency of those who condemn fox hunting for its cruelty while happily tucking into factory-farmed chicken; fishing for marlin in Kenya, trout in Chile and barracuda in the Bahamas; analysing the tea-dunking qualities of some classic British biscuits; contemplating why if piglets are destined for the pot, why aren't puppies; or reminding us that a reindeer isn't just for Christmas, but tasty all year round, Hugh has an unerring ability to entertain and provoke.

Lamb and Mutton in a Day

Lamb and Mutton in a Day

Whether you keep your own sheep (or plan to) or are interested in buying whole animals direct from a producer, this course will give you all the know-how you need to deal with the carcass, as well as some delicious recipes that make the very best of the meat.

Starting the day with two whole carcasses, one of a locally reared lamb, and one of either hogget (a one-to-two year old lamb) or mutton, Ray and the River Cottage team will demonstrate and explain the principles and process of butchering the carcass. They will go on to show how to prepare delicious and manageable joints, both for the freezer and for immediate cooking, plus meat for lamb burgers and spicy mergues sausages. Over the course of the day, you will know how to turn the offal in to delicious recipes, as well as learning a recipe for slow-cooked lamb or mutton casserole.

Half way through the day, guests will sit down to a special lamb lunch prepared by the team. You will have all the recipes to try at home.

River Cottage Kitchen Garden

River Cottage Kitchen Garden

There are many magical moments in the gardener’s year.   The first sweet tender peas podded straight into your mouth, a just-picked Gardeners Delight tomato eaten wrapped in a basil leaf, or the first sweet-sharp raspberries fresh from the cane. Yet to many growing your own seems a mystery – something we at River Cottage hope to dispel in a day dedicated to helping you make the most of your patch, be it large or small.

We’ll take you on every step of the journey from plot to plate, showing you how plan and prepare your plot, how to sow and care for your plants, as well as give you some ideas about how to get the most from your harvest.

The morning will begin with an overview of the fundamentals of growing your own so that everyone has the grounding to make a success of their patch. We’ll look at the basics that are behind successful growing on any scale – including soil management, sowing, propagation and planting, pruning, watering, feeding, and pest control.

After mid morning coffee, we’ll step outside for a tour of the River Cottage Kitchen Garden to see how we’ve put the principles into practice. You’ll see the different methods we use to grow fruit, vegetables and herbs, taking advantage of small spaces, vertical opportunities for climbers, created raised beds, used interplanting, and take away tips on applying them to your patch, whatever it’s size.

In the run up to lunch, we’ll take a break from the ‘plot’ and focus on the ‘plate’ – as the River Cottage Kitchen Team show us some of the ways that we can make the best of the seasonal harvest, preparing a three course lunch for us to enjoy.

The afternoon begins with an outdoor session in one of the River Cottage Gardens, where you’ll have a chance to take part in seasonal activities that are part of creating and maintaining a productive patch. The River Cottage Garden Team will be on hand to answer any questions you have about establishing and maintaining your patch.

A final indoor session will help you to take your patch to the next level, and include advice about choosing what to grow, the importance of selecting the right varieties, maximizing your growing season, ensuring continual harvests, and sourcing what you need.

The River Cottage Kitchen Garden is for everyone, and whether you have an acre of this green and pleasant land, an urban allotment or a high rise windowsill, you too can grab your share of the harvest.
