Now there's a new way to participate in our "Catch and Cook" course.
As well as the full day at River Cottage HQ, we've added a unique new method for you to experience the full detail of the River Cottage Fish philosophy. This is the River Cottage on-line Catch and Cook course.
Welcome to the Online Catch & Cook course.
The tastiest fish you'll ever eat is one you've caught yourself - and our online Catch and Cook course is designed to help you do exactly that. We'll show you how to catch, clean, fillet and cook a selection of the finest inshore fish.
Sections include focusing on sustainable fish catches such as mackerel, bass, bream, pollack and dogfish. Plus a River Cottage guide to 40 species. There is lots of practical information on fish skills and even how to make your own smoker. Of course there's plenty of great recipes too.
The course contains:
- Over 60 mins of Video - instruction, tips and recipes
- A complete guide to the most local sustainable and regularly caught River Cottage fish
- Over 40 of our favourite River Cottage fish recipes (In fact more than you would get on the one day course!)
And, all of this can be accessed and enjoyed again and again...

Online Mushroom Magic

Now there's a new way to participate in our Walk on the Wildside "Magic of Mushrooms" course. As well as the full day at River Cottage HQ, Mushroom Handbook and the DVD, we've added a unique new method for you to experience the full detail of our favourite wild food. This is the River Cottage on-line Mushroom course.
In this course you will learn the principles of foraging, identification and of course, cooking and eating your finds. Led by River Cottage's own wild food 'fun guy', John Wright will start with the most important aspect, safety and how to avoid being poisoned. We then establish a small target set of species for you to acquaint yourself with, so you can search and find these and then move up to extend your knowledge.
There is an interactive mushroom identification tool to help and you'll be able to record your finds and (secret!) locations.
The course contains:
- Over 30 mins of Video - instruction, tips and recipes
- An interactive guide to Mushroom idenfication and field guide for 29 common mushrooms
- Over 20 River Cottage mushroom recipes

Online Pigs and Pork course

Now there's a new way to participate in our "Pig in a Day" course.
As well as the full day at River Cottage HQ and the DVD, we've added a unique new method for you to experience the full detail of the River Cottage Pigs and Pork philosophy. This is the River Cottage on-line Pig in a Day course.
In this course you will learn the basic principles of good pig husbandry, the process of butchering a pig, and how to make your own air-dried hams, brine-cured hams, brawn, bacon, sausages, chorizos and salamis.
The course isn't just for pig keepers. You'll find it invaluable when buying your pork from your butcher or farmer.
You certainly don't need to have your own pig to try out the selection of River Cottage recipes, which range from the simple to the more adventurous. All of the content is explained using video tutorials from Hugh and Ray, along with step-by-step guides which can be printed out. At the end of the course, you will be able to use everything but the oink!
The course contains:
