We've sandwiched two of our favourite courses together, to make the perfect Bread and Jam.
Pam Corbin and Daniel Stevens have combined their Preserved and Bread Making courses to create this unique day course.
After a breakfast of homemade jam & toast with coffee, Daniel will begin with an introduction to dough making, kneading and proving. You can't have toast without butter, so Daniel will show you how to make butter as well. After Pam’s shared the secrets of making a great redcurrant jelly we’ll have a quick break for a brunch roll of bacon and egg, before demonstrating Hugh’s simple and delicious raspberry fridge jam and lemon curd.
Then it’s back to shaping the proved loaves, followed by more delicious jam making. We then go out to the bread ovens (made on our Build and Bake course) to bake the bread. In the day’s final practical session, Dan will show you how to make sourdough bread before you enjoy a very traditional River Cottage High Tea of egg and cucumber sandwiches, cheese scones, pork pies and Victoria Sponge with our own fridge jam.
A lot will be packed into this interesting day, including further demonstrations of preserving techniques to show how simple it is to make your own traditional jams, jellies and fruit preserves. You’ll discover the satisfaction of capturing all of that summer abundance to fill your larder with tempting goodies to see you through the less fruitful months of the year.
We’re confident you’ll leave the day inspired to create your own high tea for friends, armed with all the recipes, techniques and tips from the course. We’ll also give you your own supply of some of the best bread, butter and jam you could eat. After our Bread & Jam day, we’re certain you’ll have all of the essentials to enjoy the most fruitful autumn ever.
You'll be reading more about Daniel Stevens and Pam Corbin this Autumn, as they launch their own River Cottage handbooks, which you can pre-order from us now.
This event is demonstration based. Practical participation is not required, although volunteers are encouraged to take part in the demonstrations during the day.
