Janssen’s Temptation

Janssen’s Temptation

It’s amazing what you can do with a few potatoes and a tin of anchovies. Maybe a bit of cream … This is a classic Swedish dish and a great winter warmer. Serves 2 for supper.

Ingredients:

1 tin of anchovies
1 large onion, sliced
2 large potatoes (about 400–500g), peeled and cut into thick matchsticks/very thin chips
3–4 tablespoons double cream
freshly ground black pepper

 

Open the tin of anchovies and drizzle the oil from it into a pan. Add the onion and fry until softened, then stir in the potatoes and sweat until they start to soften. Remove from the heat and stir in the cream and the anchovies. Season with black pepper. Spread the mixture in a small gratin dish and bake in a hot oven (200°C/Gas Mark 6) for 20–25 minutes, until crusty and crispy and utterly irresistible.
