Drawing directly from Nonie's own experience, both as a River Cottage Chef and a
sufferer of severe food allergies, this course is a personal and practical guide to cooking up a storm in the kitchen with some delicious, mouthwatering recipes - despite being
on a restricted diet
.
The focus of the day is on the most difficult foods to substitute, particularly bread, breakfasts and baking. The day will begin at 10am with a hands on bread making session, looking at a basic loaf which you can easily adapt and add your own ingredients to - Nonie's favourite version is sun dried tomato and home made pesto. The session will also cover more specialised breads such as quinoa and pumpkin bread.
After a short break, we'll move on to the most difficult meal of the day, demonstrating delicious breakfast alternatives including muesli and more indulgent recipes such as Nonie's amazing coconut pancakes with caramelised apples. As well as this, Nonie will demonstate savoury foods, so that you can plan creatively and easily adapt meals at home.
After a sit down lunch, we'll look at Nonie's own store cupboard list, to give shopping advice for finding tricky ingredients. We'll also bake the bread you've made that morning, in our wood-fired ovens and cook a variety of delicious cakes to indulge in for afternoon tea - a treat which nobody should miss out on.
This one day course is particularly helpful for those who have just been diagnosed, as it is
a guide for adapting to the difficult first stages of your changing diet, as well as offering fresh inspiration and ideas for those who have suffered from food allergies for some time.
We hope that this one day course will inspire you and give you the confidence to go home and cook fantastic food. You'll have a pack of delicious recipes to take away with you, some of which you've seen demonstrated during the day, plus a loaf of your own Gluten & Wheat free bread.
The recipes included on the day, will be subject to seasonal change, using the freshest and best ingredients.

Location: This course is run from River Cottage H.Q on the Dorset/Devon borders. Full address details of H.Q. will be provided once you have booked via e-ticket. You won't receive anything in the post.
Wine/Drink:
We have a Bring Your Own policy and we do not charge corkage. We have a wide selection of the finest organic wines. We will be serving cordial and iced water from our own well. Herbal teas/coffee/tea and dairy free milk alternatives will be served throughout the day.
