hanging lamb

Whats the ideal length of time for hanging lamb?

well, I am no professional but i asked this same question to the abbatoir last month and they replied as follows: 
"Basically it tenderises and flavours the meat and the length of time you need to hand should depend on the fat levels of the animal itself!!  If my lambs were very fat when killed they could hang for up to 2 weeks, if lean only 1 week as the meat would dry out too much!!" 
Not sure on the facts about this but this was the advice I was given on the subject.......  Good luck..

It helps to wrap them in muslin - stops them drying out quite so much.
Chickens, sheep, pigs, ducks and geese.
