Try baking them in the oven whole and skins on in a slow oven.. for an hour or so, they should be soft when squeezed and wrinkly too...so not so quick but well worth it. gently fry a whole onion and garlic till soft, add in some finly chopped mint, and a good dollop of greek yogurt, salt and pepper and once your aubergines are cooked splilt them and scoop out all the soft flesh and mash with the oinons and serve with warm bread/pitta's yumyum
This can be eaten hot or cold as a starter..
