asked by lownzy onI bought some ready to plant onions from b&q around march time as they were on offer for a pound. I threw them into the ground not expecting much but have noticed they now have shoots about four inches long. When should I harvest?

Fruit vinegars
asked by seadanes onAll the recipes I find for fruit vinegars call for sugar, but I can't have sugar. Can I just omit the sugar because the vinegar will preserve it? Or do I need to make some modification?

ProQ cold smoke generator - how long should I smoke an air-dried sausage for?

Has anyone used a proQ cold smoke generator to smoke sausages that are then air-dried? How long should the sausages be smoked for? My recipe calls for chestnut wood (which I gather is relatively strong-tasting) - does this make a difference?
The proQ generator can smoulder for 8hrs - having read recipes that call for 24hr smoking I was thinking I'd just give it the full 8 and see how smoky it is......'undersmoked' wouldn't be a disastrous result, but is there any risk that the sausages could be 'oversmoked' in this time?

Broody Hen
asked by Ginny onI have a very committed broody hen on eggs. She's in with the rest of the hens and cockerel but when I move her to a separate coop she refuses to go back to her eggs. I've shut her in with the eggs for 24 hours then opened the door to the pen attached but she rushes off and won't return to her eggs. If I let her, she goes straight back to the main hen house. She has been on the eggs for a week. Any suggestions about how to move her or should I give up?

Clotted cream - how to make

Having had clotted cream with scones and jam in Devon (and on other holydays in GB) I would like to be able to have it at home. In Denmark you kan not buy clottet cream in the corner shop. I have not found it for sale at all.
I know a farmers whife who is willing to try making it for me. All I need is a recipe.
How do you make clotted cream?
I want it to be pastorised. Does that make a difference to the recipe? Or the result?
