I dont know what it is about chilli...but now I'm addicted. I cant get enough of this chilli......enjoy. cheat if you have no dried chilli us some chipotle paste ....to your preferred strength and taste. the smokey flavour of both help make this chilli....peeerrrfect!!.

  • serves 6 (i freeze what i dont eat that day)
Ingredients
  • 500g Mince beef
  • 2x onions fine diced
  • 2x med carrots fine diced
  • 2x sticks of celery fine diced
  • handful of mushrooms chpped
  • 1x med courgette fine diced
  • 2x red pepper rough chopped
  • 2 cloves garlic
  • olive oil 2 glugs
  • 1 level tsp ground cinnamon
  • 1 heaped tsp ground cumin
  • 2x chipotle chillis whole
  • 2x ancho chilli (both chilli seeds removed and stem and rehydrated in boiling water)
  • 2 tbs brown sugar
  • 100ml sherry
  • 2 tbs balsamic vinegar
  • grated cacao a generous grating (a good handful)
  • 2x 400g tins tomatos
  • 2x 400g tins kidney beans drained and washed under tap till water clears
  • handful of coriander
  • salt and pepper
  •  
  • 1tsp chipotle paste (optional)

Directions
put olive oil in a big pan add all non tinned veg and fry for 1 minute add all dried spices and chillis. fry for 7 mins add the sherry add the kidney beans brown the mince in a pan and add to the veg followed by the tomatoes. fill one tomato tin with water and add that to the pan add balsamic and sugar take a handful of coriander remove stalks and chop the stalks fine and add to pot cook for one hour. then cool mix best served next day.....or as long as you can wait use coriander leaves chopped to garnish serve with homemade guacamole tortilla chips covered in grated cheese and put in oven and served when melted enjoy oh i do boil some basmati rice and serve that with this chilli
