Inspired by a glut of courgettes I came up with this starter recipe which gives a British twist to a Turkish dip known as Baba Ganoush (usually made with aubergines).

Ingredients
  • 3 tbsp olive oil
  • 2 large courgettes, sliced
  • 2 garlic cloves, peeled
  • 1/2 green chilli, deseeded and chopped
  • Juice of half a lemon
  • Pinch ground cumin
  • Pinch white pepper
  • Paprika and flatbread (to serve)

Directions
Lightly sauté the courgettes in a little olive oil, for around 5-6 minutes, turning occasionally until they are soft, leave to cool. Meanwhile, pound the garlic in a pestle and mortar until smooth. Put the courgette, garlic, chilli, lemon, cumin and pepper into a food processor. Blitz for a few seconds until you have a coarse puree. Season to taste. Transfer to a bowl and chill. When you;re ready to serve, drizzle with a little more olive oil, sprinkle with paprika and serve with flatbread.
