Bean Jar is a local Guernsey dish which is enjoyed by all islanders. It is always served at the local farmers market, la via a marche, and goes down a treat. Even the most tragic effort usually turns out OK. If in doubt, put it back in the oven.

  • Add Lib

  • Dried Harricot and butter beans
  • Pigs Trotter and Shin, but can leave meat out or use a different fatty cut.
  • Carrots and a few onions
  • Stock.

Directions
Bean Jar Butter and haricot, trotter and shin, onions and carrots some stock nice and thin. The beans they must soak at least overnight, until their expanded and soft, we must get it right. Then dice up the carrots and onions all neat, and heat up a pan to braise off the meat. Some salt and some pepper and herbs if you like, add some more later to get it just right. Warm up the oven an Aga is best, an earthenware pot, to give it some zest. In with the beans, the veg and the meat, place in the oven and bring to the heat. Take it out on occasions and stir it all up, don’t panic, its easy, this dish you can’t flop. If you forget it for hours don’t get in a tiz, the slower you cook it, the better it is. Then cool it and heat it and cool it again. Is it cooked? When its thick and delicious that’s when. Serve it in mugs with thick chunks of bread, then wait for the aftermath – Farting in bed!

I make a vegie version, my friends all prefer it to the meat one! I love it spead over bread the day after in a sandwich with thick salted guernsey butter!

A remarkably similar recipe to Jersey Bean Crock though it's probably pointless arguing about who invented it!

I think that the trotters are essential for both the flavour and texture of the dish but I've never bothered with any additional meat. (I also like sucking the meat off the trotters but that's probably just me.)

What is essential is letting the dish get completely cold and then reheating. It just doesn't taste right if you don't.

appart from the fact it sounds wonderful, it reads wonderfully, i think there is calling out there for a poetic/rhyming cook book! thanks for the recipe

I'm going to have to try this it sounds wonderful. Won't tell the wife about the aftermath though!!!!! I'll let that be a suprise??!!
