This recipe has come from one of my friends, who wanted to share his recipe which uses beetroot in a surprising way, but works very well!

  • 30 mins
  • * 75 g cocoa
  • * 180 g plain flour
  • * 2 teaspoons baking powder
  • * 250 g castor sugar
  • * 250 g cooked beetroot
  • * 3 large eggs
  • * 200 ml vegetable oil
  • * Vanilla extract
Whizz the beetroot into a purée and add the eggs, and then the oil. Mix the dry ingredients in a bowl and add the beetroot purée. Bake at 180°C for about 30 minutes.

Left this cooking in slow cooker whilst doing nursery and swimming. It worked well. Had lovely hot steaming chocbeet cake with some cream. Things that made this recipe easy was pureeing the beetroot - not having to grate it, also using cocoa rather than melting chocolate. This made it easy for me and the short ahem I mean very grown up four year old to help. She loved it and she enjoyed liking the prep bowl and spoons. Def a thumbs up.

just trying this now. so far looks good. Have made slight change in that I am cooking it in the slow cooker, but will let you know how it goes. It looks a georgeous colour
