A variation on a traditional recipe that makes a lovely last minute Christmas gift.

Ingredients
  • 30 g butter
  • 75 g sugar
  • 2 tsp flour
  • 75ml double cream
  • 100g brazil nuts roughly chopped
  • 100g dried apricots chopped
  • 200g milk or plain chocolate depending on taste

Directions
melt together butter, flour and sugar whisking until glossy and resembles a roux, gradually add the cream stirring until blended. Add the nuts and fruit and stir in well. Put large teaspoonfulls onto a tray lined with silicone paper should get around 8-9 to a tray no more as they spread out. Bake at 180c for 12-15 mins. Remove to a cooling rack when light golden brown. Melt chocolate in a microwave by smashing it up in the pack, put in a bowl and heat on high for 50 secs, stir and heat for 30 secs stir until melted. Brush onto the flat side of the florentine. When nearly set draw a wavy pattern on them with a fork. Pack into cellophane bags and give as pressies!
