Squirrel with Peanut Butter dipping sauce. From Everything Wild Game Cookbook, by Karen Eagle. American Recipe, so amounts may need to be adjusted

  • 4 whole squirrels, flattened
  • zest and juice of 1 lime
  • 1/3 cup sherry
  • 1/3 cup cream
  • 1/4 cup peanut butter
  • 1/4 cup chilli sauce
  • 1/2 cup butter
  • S & P
Prepare hot grill, sprinkle meat with s&p. Combine all ingredients except the butter in a saucepan and simmer 10 mins, stirring and then keep warm Melt butter, baste squirrel and grill over medium to high heat for about 15 - 20 mins until leg meat pulls easily away from bone. Serve with dipping sauce and plenty of hand wipes!
