This lovely winter warmer makes the most of a savoy cabbage.

  • *400g Small potatoes, unpeeled and sliced thinly
  • *1 Medium onion, peeled and sliced
  • *2.5 pints of vegetable or chicken stock
  • *200g Savoy cabbage
  • *225g chorizo, sliced
  • *Salt and pepper
  • *Handful of flat-leaf parsley

1 Put the slices of potato and onion in a large pan with the stock. Cover, and bring to the boil, then turn down the heat and simmer for 15 minutes. 2 Finely shred the cabbage and put it on top of the potatoes and onion in the pan, half cover and let it steam for 5 minutes. 3 Meanwhile, heat a frying pan, add the sliced chorizo and let them cook, turning them once for about 5 minutes until the oil runs out and the slices turn brown a little. 4 Stir the cabbage into the soup and season well, then spoon into large warmed bowls. Spoon the chorizo slices on top and drizzle with the oil. Garnish with the parsley.
