This is my very own variation of the much loved Italian Gratin recipe. Although it is a very simple and quick dish to prepare this still remains a 'show stopper' at dinner parties in this house, everyone who has had it here, wants the recipe so here it is guys....enjoy!

  • 4 as a Starter/2 as a Main
  • 1 Bag of mussels, washed and cleaned
  • 3 glasses of white wine
  • 4 cloves garlic
  • 1 thumb size piece of fresh ginger
  • bunch of coriander
  • 1/2 red birds eye chilli
  • 3 tsp ground black pepper
  • 1/2 tsp salt
  • 4 tbs grated parmersan cheese
  • 200g breadcrumbs
  • few good glugs of olive oil

In a large pan, gently soften 1 glove of garlic. Add wine and when hot slowly pour in the mussles. Cover and cook for 3/4mins or until all opened. Meanwhile finley chop ginger,chilli and coriander along with the rest of the garlic mix well with the breadcrumbs, salt, pepper, cheese. Carefully drain the mussels discarding any that are unopened. Place in a large oven tray, and sprinkle over the breadcrumb mixture followed by a few glugs of the olive oil. Put under a hot grill for around 8 mins or until the crumbs are golden in colour. Serve in one big bowl to share with crusty bread. . . Yum Yum
