  • Six -nine depending on size of bowl
Ingredients
  • 1 litre home made chicken stock
  • (Two organic or free range chicken carcasses, 2 carrots, Celery, Onion, Thyme, Bay leaf. cooked in a litre of water and reduced by half. takes about 4 hours)
  • Any left over chicken meat from a roast chicken, including the roasted skin and scrapings from the roasting tin. The Chicken carcasses had enough meat still on them which I picked off the bones after the stock was done and used this in the soup as well.
  • Two Banana shallots
  • Two sticks of Celery
  • 1 bay leaf,
  • 2-3 sprigs of fresh thyme
  • 1 tablespoon of Sherry
  • large carton of single cream
  • 1 litre of full fat milk
  • salt & pepper to taste
  • large knob of butter
  • 2 tablespoons of Ground rice to thicken the soup depending on how thick you want the soup to be.

Directions
1)Chop the celery and onion and sweat down the veg until nearly soft and not coloured. in a large saucepan using the butter. (for about 10 minutes ) 2) Add the Stock Thyme, Bay leaf, and salt and peper and simmer for about 10 minutes. 3) Now add about three quarters of the chicken meat, including the roasted chicken skin and scrapings from the roasting tin and take off the heat. 4)liquidise the soup until smooth. 5) Add the Sherry, Cream and milk and simmer for 10-15 minutes. If the soup is a little runny and you would like it to be thicker, add the ground rice powder and simmer the soup until you get the required thickness. Once the soup is cooked, leave to cool completely and If you can eat it the next day as the soup deepens in flavour and you end up with a most fantastic deep chickeny taste.
