Italian style chicken dish with plenty of veg to boost. A perfect comfort food.

  • 500 gr dark chicken meat, skinned.
  • 2 large celery sticks (can also use fresh lovage leaves)
  • 1 coarsely chopped onion
  • 3-4 cloves of garlic chopped
  • 2 large carrots chopped
  • 1 paprika chopped
  • a good bunch of basil coarsely chopped
  • a few leaves of sage
  • 3 sun dried tomatoes in oil, thinly sliced
  • 500 ml stock
  • 1 cup red wine
  • small can tomato purée
  • a good glob of butter
  • a splash of olive oil
  • Salt and pepper to taste
  • sugar or honey to taste.

Cut the chicken meat in to good chunks and brown in butter and olive oil. sweat the onion and the garlic and throw some of the basil in there as well. pour the red wine over the whole thing and let simmer for 5 minutes or so. Then throw all the rest of the veg in there and stir to coat everything. Pour the stock over, throw in the sage leave and let it simmer for an hour or so on low heat. To get the thickness you want scoop the purée in there and stir. At this point the stew can be a little sour due to the tomato purée so I put some sugar or honey to minimize that. Make sure it's not too sweet. I like this on the thicker side so I let it simmer for an half an hour or more to get the consistency just perfect. The perfect thing to serve with this is a mash potato made from steamed regular taters and sweet potatoes. Throw some sweet corn in there and nutmeg. At the center of a plate, put a good glob of mash potato and make a hole in the center of it. Pour the chicken stew in the hole and serve.
