A sausage with a difference. Cut into the meaty layers to discover a vegetable heart. Is delicious as a starter but can also be enjoyed as a main course with chips or potatoes & veg. A tasty all rounder.

Ingredients
  • 1 teaspoon crushed chillies
  • 1 garlic clove
  • 2 tbsp ground nut oil
  • 500gm sausage meat
  • handful fresh parsley finely chopped
  • 2 handfuls basil
  • 1 small chopped onion
  • 1/2 red pepper
  • 6 baby courgettes
  • 6 rashers bacon

Directions
Add chillies, garlic and small amount of oil to frying pan and gently fry off. Put sausage meat, parsley, basil stalks and onion in a bowl and mix. Slice courgettes in half lengthways, slice pepper into strips same size as courgettes. Add courgettes flesh side down to pan and fry till nearly soft. Put a strip of pepper in between two pieces of courgette to make a sandwich. Wrap basil leaves around this and coat the whole thing with the sausage mixture still keeping a sausage shape. Then wrap with a rasher of bacon. Place the sausage shape onto a piece of silver foil which has been greased with butter and gently roll encasing the sausage with the foil making a christmas cracker shape. Do this repeatedly to make 6 sausages. Keep in the fridge until ready to cook. Place sausages in the foil into a roasting tin slightly filled with water and cover the whole thing with a sealed silver foil lid. Cook on high heat for about 40 mins. Remove from oven and peel off silver foil. Then place sausages under the grill to brown for a couple of mins. Serve with salad garnish and home made apple sauce.
