- Equipments:
- A high speed blender
- A dehydrator
- A paraflex sheet
- A table spoon
- Wrapper:
- 2 young coconuts meat
- 3 table spoons of beetroot juice
- 1/2 cup of coconut water
- 1 tsp of sea salt
Instructions:
Safely open the young coconut , filter and set a side the water. With the back of a table spoon, gently remove the young meat, clean the coconut meat by removing the brown Skin from the outer shell.
Cut in chunky pieces and liquidise with the rest of ingredients in a high speed blender.
Spread the liquid on a paraflex sheet, insert in the dehydrator at 105F for 3hrs-4hrs.
Filling:
Use your creativity!
1 mango - dice
1bell pepper - dice
1/2 of cucumber - dice
1 red onion - dice
1 spring onion - chop
1 tomato - remove the seedy meat and dice
1 tbsp of chopped coriander
1 tsp of lime juice
A pinch of see salt
A pinch of black pepper
Combine and toss all above ingredients in bowl
Assembly:
Cut sheet in 5/6 stripes
Use a tablespoon to measure portion of filling
And fold as indicated below

We have had a dehydrator for just over a year and have made beef jerky, candied peel, yoghurt leather and apple leather with it (the apple leather can be made with the pulp left after extracting the juice for apple jelly so is very economical) as well as drying herbs and fruit. Ours is an Excalibur with four trays which is about the right size for us, I think the one in the show is the same make. When we researched online we found that the best dehydrators have thermostats as different temperatures are required for different foods. The dehydrator is supplied with fine mesh sheets suitable for some jobs but for the samosa wrappers you will definitely also need the Paraflex sheets, these are re-usable smooth lining sheets. The dehydrator is supplied with a recipe book and there are loads more online including funny and informative videos on You Tube for beef jerky. Hope that helps!
I was totally inspired by Chris's food preparations. It looked really fabulous and I would love to re-recreate some of those recipes. I would very much appreciate if you could forward some more info on food dehydrators, i.e. the make and possibly some more recipes. Thanks!
