My husband's colleague Liz gave us 4 home grown courgettes. This recipe was created for that special occasion. The following week we had 3 more, and a different version - but equally delicious - followed. Almost anything except the courgettes can be substituted, depending on what is in the fridge/store cupboard.

Ingredients
  • Version 1: COURGETTE AND VEGETABLE WRAPS
  • 4 courgettes (home grown) and a red pepper, sliced and roasted for 20 mins 180/gas 4.
  • 1/2 tsp pink peppercorns
  • 2 tsp fresh thyme (from the garden)
  • small tin butter beans, drained
  • 1/4 cup each sweetcorn and peas. (it's easier to have a liquid measure - 2 fl oz each if you haven't a cup measure)
  • 2.5 Tbs made up vegetable gravy
  • 8 soft tortilla wraps
  • 300g mozzarella cheese, grated
  •  
  • VERSION 2: COURGETTE AND QUORN wraps
  • 4 courgettes (home grown)
  • 1 parsnip
  • 1 carrot
  • 2 large leeks
  • 2 sticks celery
  • 1/4 red pepper
  • oil for frying
  • 1 pkt quorn mince
  • a little water
  • 1 large jar red sauce (eg Seeds of Change)
  • about 2Tbs tomato puree (opt)
  • 2 tsp fresh thyme (from the garden)
  • small tin red kidney beans, drained
  • 8 soft tortilla wraps
  • 300g mozzarella cheese, grated

Directions
VERSION 1 for COURGETTE AND VEGETABLE WRAPS: Combine all ingredients except the last 2. Prepare the wraps with a generous amount of filling down the centre, fold over once and turn to the side in a flat bottomed oven dish or roasting pan. Sprinkle the mozzarella in a thin layer over everything. Bake 12-14 mins, 180 (fan oven) or 190 regular /gas 4.5 VERSION 2 FOR COURGETTE AND QUORN WRAPS: Wash the leeks, slice the vegetables including courgettes. Sweat the vegetables in olive oil for about 10 minutes in a heavy bottomed saucepan with a lid on and stirring occasionally, until soft. Add the quorn mince, stir a couple of minutes, add a little water to soak into the quorn mince. When about to boil add the jar of sauce and thyme. Leave simmering gently with lid on, stirring occasionally for about 15 mins. Add tomato puree if too liquid. Make up the wraps as above, sprinkled with the grated mozzarella cheese, and bake in the same way.
