A delicious summer soup to really show off the taste of those home grown courgettes!

Ingredients
  • 900g (2lb) Courgettes
  • 225g (0.5lb) Desiree Potato
  • Clove Garlic
  • Large Onion
  • 900ml (1.5pt) White Vegetable stock or water
  • 4 tablespoon chopped fresh Basil
  • Salt & Pepper
  • knob butter
  • 4 tablespoons double cream

Directions
1. Wash the courgettes and chop into chunks. Peel and cut the potatoes into small cubes. 2. Peel and slice the onion. Crush the garlic. 3. Heat the butter in a large pan and add the onion and garlic. Lightly fry for about 5 minutes to soften. 4. Add the potatoes to the pan, cover with half of the stock or water, bring to the boil and then reduce to a simmer for about 15 minutes until half-cooked. 5. Add the courgette chunks, salt and pepper to taste, chopped basil and the rest of the stock or water, bring to the boil and then reduce to a simmer for 10 minutes, stirring occasionally, until the potatoes are fully cooked. 6. Pour into a blender (or use a hand stick blender) and blend to a smooth puree. 7. Return to the pan and add the cream. Warm the soup through but do not boil. 8. Serve with warm crusty bread or rolls.

Using yellow courgettes, I've made this soup without the cream (good tip for dieters!) but with more basil, and it's fabulous! Haven't tried to freeze it yet, but it's useful to know that it freezes well.

I made this to use up a glut of courgettes and when my husband tasted it, he said it was delicious, and it is now one of his favourite soups. Yes it does freeze very well.

I had lots of courgettes and decided to try your recipe. I found it needed a bit more cream than you suggest but thats my personal taste. 5*s from me and it freezes well too!
