This is a lovely easy to make "bread" rather akin to a tea bread or malt loaf, it is delicious as a cake drizzled with an orange icing glaze or as a bread buttered and served for afternoon tea. eat warm or cold really versatile and I guarantee you will not know that you are eating courgette, great way to trick the kids. My kids absolutely love it and so do I - its the only reason I grow courgettes because they are vile otherwise!!! (and I never tell friends what they are eating) The recipie was one that I was given when I was a nanny for an American family so it is in American style measures. Try it - I dare you!

  • makes 2 loaves each approx 12 - 16 slices
Ingredients
  • 4 Eggs
  • 1 1/2 cups sugar
  • 3/4 cup of vegetable oil
  • 2 cups of unpeeled courgette - grated
  • 2/3 cup orange juice
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon baking soda
  • 3 1/4 cups plain flour
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup of chopped nuts (optional)
  •  
  • Otional Glaze
  •  
  • 3 tablesppons of orange juice
  • 1 cup of icing sugar

Directions
Preheat oven to 350/180 degrees gas mark 4 and grease/line 2 loaf pans In a large bowl beat eggs until thick and pale, gradually beat in the sugar. Next add the oil, orange juice and grated courgette and mix well. Add all of the other ingredients and mix well. Pour this batter (it will be quite runny) into the two tins and bake in the oven for approx 45 mins or until a skewer inserted comes out clean. Turn out onto wire racks to cool. If glazing allow to cool slightly (around 10 mins), prick the surface, mix the glaze ingredients together and then drizzle slowly over the top allowing it to seep into the cracks and pricked holes. Or allow to cool completley and slice and served buttered

Hey Jennibear have just made some of this and it is delicious. One of the best recipe finds for ages. So simple to make too although had trouble with US/UK cup thing and forgot the salt. Have written about it in my blog. Well done on a great recipe.

This is yummy, made it for the kids and they scoffed it all down without knowing what was in it. It was lovely and moist and nicely spiced and unbelievably easy to make.

We are definately making it again.
