A nice change from potatoes/rice/pasta etc. And good use for when you just didn't make it into the garden to pick the courgettes when they were young and tender.

  • 2-4 people depending
Ingredients
  • 1 large courgette, coarsely grated
  • 1 small finely chopped or grated onion
  • 1 dl finely chopped herbs - anything really, although mint would be a stretch
  • 125 gr normal flour (wholemeal makes the fritters too heavy)
  • 2 eggs, lightly beaten
  • 1/2 tsp flaky sea salt
  • Freshly ground black pepper

Directions
Mix everything together lightly. You can make four large or 6-8 smaller patties of this. Fry in plenty of oil - use whatever good quality oil you like - approximately 3 minutes on each side. Leave them on kitchen towel to drain excess oil. Some sort of yoghurt dressing goes well with this.

Even with the heat and drought here in Texas my zucchini have done well.
I substitued gluten free flour and used basil for the herb which was perfect.
I fried them in coconut oil. For once my husband enjoyed his squash.
