A great soup to use up a glut of courgettes. It can be frozen ready to eat through the winter.

  • 3 pints
  • 1 Onion (Chopped), 1 lb Courgettes (Sliced), 1/2 lb Potatoes, (chopped), 1 inch root ginger (Peeled & sliced), 3 pints milk, 3 oz butter, 1 1/2 chicken stock cubes.

Fry onion in butter for a couple of minutes, then add courgettes, ginger & potato for a few minutes to release the flavour. Add milk & stock cubes and simmer until all veg is cooked. Season to taste. Liquidise and sieve. Serve with chunks of crusty bread. Can be frozen.
