So easy you do not really need quantities. Looks particulary good with different coloured courgettes. You could vary the ingredients, such as swapping the pesto for slices of tomatoes.

Ingredients
  • 8 ozs puff pastry
  • 1 large red onion sliced thinly
  • 2 Tablespoons pesto
  • 3 courgettes sliced thinly (depending on size)
  • little olive oil
  • 100 gms feta cheese
Directions
Heat some olive oil in frying pan, and cook onions until transparent, remove and cool, in same pan fry the courgettte slices in batches,until slighly browned, removing to kitchen paper, you will need to add more oil as you go, or you could use a little butter if you like. Roll out puff pastry to square/oblong about 5mm thick,mark out a border of about 2cms, spread pesto over the base (you could omit the border if you prefer). Then put the red onions on the pesto layer, then add the courgettes overlaping each other. Crumble feta cheese on top with a seasoning of salt and pepper. Cook in preheated oven at 200 degrees for about 20 mins.
