I would like to share this one from Australia with you. Although it is winter in Melbourne we still get good organic summer veg from the northern states. So I have not grown these particular Courgettes however I did during our summer period. It is a Courgette with Streaky Bacon in a slice which can be cut into pieces for a light lunch with green salad on the side. Just right to eat while watching the Ashes

  • 12-16 pieces
Ingredients
  • 1/2 cup of olive oil
  • 500 grams courgette roughly grated
  • 1 large onion
  • 150 grams smoked streaky bacon
  • 170 grams freshly grated parmesan cheese
  • 150 grams self raising flour
  • 3 large eggs compliments of the girls down the back, lightly beaten
  • salt
  • pepper
  • 3 large ripe tomatoes sliced thick.

Directions
Pre heat oven to 180 degrees c. Oil a square tin approx 25cm square and line with baking paper. Combine all ingredients except for Tomatoes and remaining oil. I like to get my hands in there to mix it up. Pour mixture into baking tin and smooth top. Cover with tomato slices and drizzle with oil. Baked for about 30 Mins or until firm. Cut into pieces and serve either Warm or cold with a green salad.

Hi Scotty C, Sorry to sound thick, but do you cook the bacon before adding it? Also, do you chop the bacon up or leave it in its long lenghts?

This recipe is fab and really easy- my husband thinks its one of the tastiest things he's eaten and I even managed to get a teenageer to eat and enjoy. So thanks!
