This delicious thick, creamy pumpkin soup is a firm favourite in the Haly household. It is delicious served with garlic bread or cheese on toast.

  • 6 rashers bacon, chopped
  • 1 large onion, finely diced
  • 2 teaspoons crushed garlic
  • 1 tablespoon oil
  • 750 grams pumpkin, peeled and chopped
  • 2 large potatoes, peeled and chopped
  • 1 1/2pts chicken or ham stock
  • 1/2 cup finely chopped fresh herbs
  • 120ml double cream
  • Salt and pepper to taste
  • Sour cream and fresh herbs to serve
Heat a large saucepan over a moderate heat. Fry the bacon until lightly browned and set aside. Add the onion and garlic to the pan with the oil. Cook 3 - 4 minutes. Add pumpkin and potatoes. Cook for 5 minutes, then add the stock. Cover and cook 30minutes, or until vegetables are tender. Puree soup using a blender or mash with a potato masher. Stir through bacon, herbs and cream. Season to taste. Garnish with a dollop of sour cream and fresh herbs. Serve hot with garlic bread/cheese on toast.

I tried pumpkin soup for the 1st time the other day, it was good, this one sounds nice also, I may try it some time.
