If ever there was a dessert to be passionate about, it's this one. With just four ingredients, Donal's simple passionfruit syllabub recipe means you're only minutes away from pudding paradise.

Ingredients
  • * 1 glass dry white wine
  • * 100g caster sugar
  • * 300ml double cream
  • * 6 passion fruit

Directions

1. Put the wine in a small pan and add the sugar. Heat gently, stirring, just until the sugar has dissolved, then leave to cool completely.

2. Whip the cream until it holds soft peaks. Carefully fold in the sweetened wine. Scoop the pulp from five of the passion fruit and fold that in too. Pour into a serving dish. Finish off with the pulp from the final passion fruit. Serve chilled.

Now I saw this on Hugh's tv programme, I was watching with fiancee Cilla, actually, it was her tv. What a delightful dessert was my first thought, the pudding club is held at the pub near Cilla's caravan on the South Coast, so must pop in there sometime. I looked the recipe up on the website, did not have all the ingredients when she came over yesterday evening, so I made her a low calorie main meal followed by a Syllabub for Cilla.
Did not have any dry white wine, so used port, put the sugar in as per recipe. Whisked the double cream to peaks with a drop of vanilla extract in it. Then put 125 grms of blueberries in and poured the wine in while mixing. Poured it all into two dishes and on top put about 100 grms of rasberries Cilla had brought over from her garden shared between the two dishes, I then put two rabbit eared shaped pieces of 70% cocoa chocolate stuck in the top. It was really delicious and the chocolate mixing with the fruit and cream, WOW!!
Thank you to the programme for a brilliant dessert and what's more, it has given me a few more idea's along the same lines.
