A really easy pumpkin soup I made, while I was on the quest of finding yummy pumpkin recipes for my other half that doesn't like it much. There was not to much effort other then the whole cutting the pumpkin up. This also has a bit of a kick about 30 seconds after taking the first sip and lingers for sometime after wards so great for a winter lunch time meal.

  • 1 kg pumpkin cubed 1cm
  • 1 tablespoon olive oil
  • 2.5 cups of chicken stock
  • 2 teaspoons chill powder

Place the pumpkin in a roasting pan, and drizzle olive oil over the top. Pup in oven at about 200 c for about 40 mins or until cooked though. Puree the pumpkin or mash and set aside. Heat chicken stock until boiling and then add pureed pumpkin, continue to boil until the soup is thickened. Add chill powder to taste, for us 2 teaspoons gave a good kick.
