- 5 medium onions, sliced thinly
- 3 cloves of garlic, crushed
- 2x175ml glasses of red wine
- 750ml/1¼ fl oz vegetable stock
- 4 tbsp balsamic vinegar
- 20g/ ¾ oz vegan margarine (Pure for example)
- 8 slices of wholemeal bread
- 80g/3 oz vegan ‘cheese’ (Sheese or Cheezly for example)
- 8 bay leaves
- * Vegan ‘cheese’ is available in all good health stores
1. Saute the onions and garlic in vegan margarine for 15-20 mins until brown.
2. Stir well before adding wine, stock and vinegar.
3. Bring to the boil and simmer for 10 mins.
4. Toast the bread and top with grated vegan ‘cheese’ and grill until lightly melted.
5. Serve soup into bowls, slice pieces of bread and ‘cheese’ in half and place on top of soup.
6. Decorate with 2 bay leaves on top.
