Fried Courgettes with Nutmeg and Puy lentils

Courgettes fried in butter and fresh thyme and finished with nutmeg. Served with dressed puy lentils, toasted walnuts and mild goats cheese.

Ingredients

1 large mug of puy lentils
2 decent sized courgettes
a sprig of fresh thyme
large knob of butter
quarter of a grated nutmeg
juice of half lemon
walnut oil or olive oil to taste
salt and pepper to taste
handful of toasted walnuts
a small log of goats cheese
Quantities are fairly flexible as it can be made to taste

Directions

In a pan cover the lentils with water and simmer until tender but not mushy. Drain any excess water. Meanwhile slice courgette and toast walnuts. When lentils are nearly cooked start to fry courgettes with butter and the whole spring of thyme in a heavy frying pan. I like them really brown. Whilst the courgettes are browning dress the lentils with lemon juice, walnut oil and salt and pepper, dress it to taste. Finish the courgettes with good grating of nutmeg. Serve up, dotting it with the walnuts nuts and goats cheese. Extra black pepper and walnut oil doesn't hurt either.
