Use a courgette that has grown to the size of marrow (like me) or a marrow-a tin of corned beef and a few day to day ingredients to make this scrummy supper that even my vegetale phobic boys ate and enjoyed

Ingredients
  • 1 large courgette/Marrow
  • 1 Tin Corned Beef
  • 1 Tin Chopped tomatoes
  • 1 onion or 2 shallots
  • A clove garlic
  • chopped carrot,mushrooms.handful of pea's n sweetcorn
  • A big dollop of tomato puree
  • Grated Cheese(The more the better)
  • seasoning and oil

Directions
Gently fry the onion/shallot and garlic in a large pan till opaque then add the mushrooms carrot peas n sweetcorn and fry for a further 5-10 mins Add the tomatoes and puree and heat through before adding the corned beef cut into cubes,season to taste and allow corned beef to heat through and break up. Now slice the courgette/marrow in half to form 2 "canoes"and hollow out centre. Fill your "canoes" with the Corned beef mix and Cookin the oven for 30 mins loosely covered in foil at 200 c Remove and smoothered in grated cheese then pop back in the oven reduce the heat to 150 c and cook for a further 15 mins until cheese golden brown
