An impressive but very easy to make (and delicious) scallop dish. You'll need to buy whole scallops so you can use the shells as baking dishes.

  • 8 minutes
  • 4 (starters)
  • 2 cloves of garlic, very finely chopped
  • 150g butter
  • Handful parsley, chopped
  • 1 red chilli, deseeded and very finely chopped
  • 8 hand-dived scallops, trimmed and cleaned (keep four half shells)
  • Glass white wine
  • Olive oil
  • 100g breadcrumbs

Heat the oven to 250C Combine the butter, garlic and chilli in a bowl Place two scallops in each half shell Add to each shell a splash of white wine, sprinkle with parsley and a drizzle of olive oil Cover scallops with breadcrumbs and add a knob of the butter Bake in the oven for around 8 minutes until breadcrumbs turn golden brown

Going to try this one ,my next door neighbour is a scallop fisherman and I love scallops,can eat them till I am sick! Oven baked sounds georgeous.Hermit

Interesting! I come from a household that eats very little seafood but i've been interested in branching out. Scallops I certainly like, and this recipe looks promising! thanks and i'll give it a shot.
