A use of any spare hops you have from beer making! I used a mix of Saaz and Stryin Goldings but any will do.

Ingredients
  • 75g of Hops
  • 25g Bruised Fresh Ginger
  • 1.1Kg Sugar
  • 1 Juice of one Lemon
  • 1 orange or 1 Tsp Citric Acid
  • 1 245grm White Grape concentrate
  • 1 Tsp Nutrient
  • 1 pkt Wine Yeast

Directions
Cut up the ginger and boil the Sugar, Hops, Ginger and juice of Lemon and orange in 4.5ltrs of Water for 1hr 15 min. Let cool to pitching temp (Blood temp) and transfer to Demijohn. Top up Demijohn to 4.5lrs and add Citric acid (if no orange added), Nutrient and Yeast! Leave to ferment, when fermentation is complete, add 1 campden tablet and rack, leave to stablise and clear (bentonite can help but not essential), bottle and best to leave for six months before enjoying.
