Hugh's kale, chicken stock and spaghetti

Hugh's kale, chicken stock and spaghetti taken from the Hugh's Three Good Things on More4. Hugh's recognised a simple pattern that underpins so many well-loved dishes – that they are little more or less than three good things on a plate and in this series, he pursues that idea, experimenting with different flavours and textures.

  • 200g kale, washed and stripped off the stalks
  • 500ml chicken or veg stock
  • 50g spaghetti or noodles
, , , ,

Warm the stock in a saucepan.

Check the seasoning then add more salt and pepper if necessary.

Bring to a rolling boil, then add the spaghetti and cook until almost al dente (about 8 mins).

Add the kale and simmer until tender.

Serve the broth in hot soup bowls.
