Maine Grilled Lobster Rolls

Since I live in Maine, my first recipe had to be the famous Maine lobster roll. This is my twist to this well known sandwich; I grill the lobster. I'm sorry I don't have the conversions for this recipe...but I will soon.

4 to 6 sandwiches

Ingredients

2 to 3 One and a quater pound Maine lobsters
1 cup melted, salted butter
1/2 cup aioli
Sprinkling of sniped chives
Squeeze of lemon
4 New England style hot dog rolls or sub rolls

Lobster, Chives, Lemon, bread

Directions

Preheat grill and brush lightly with oil to keep lobsters from sticking to grate. Dispatch lobsters but cutting them lengthwise along the body. Once your coals have gone ashen, remove claws and knuckles from the body and add to the gill and cover. Gill for about 3 mins and then add the bodiesl shell side down and baste the exposed meat with melted butter. Cover and gill for 6 to 8 minutes. Remove the claws and bodies from the gill and let cool. Once cool, remove the lobster meat and cut into half-inch pieces. Don't forget to suck the legs!(that's the sweetest meat of the lobster) Mix lobster meat with the rest of the ingredients. Use any remaining butter and baste rolls and grill until golden brown. Place lobster mixture in rolls and serve to friends and family and enjoy a taste of Maine.
