  • 4 serves
  • 1/2 cup macaroni, 1 tbs olive oil, 1 leek - sliced, 2 cloves crushed garlic, 3 rashes of chopped bacon - rind removed, 1 carrot - sliced, 1 potato - chopped, 2 celery sticks - sliced, 1 small dried chili - diced and seeds removed (opt.), 1 zucchini - sliced, 100g green beans - cut into short lengths, 440g can chopped tomatoes, 2 litres of vegetable chicken or beef stock, 2 tbs tomato paste, 440g can borlotti beans - drained and rinsed, fresh flat-leaf parsley and shaved parmesan to garnish.

Cook macaroni for 10-12 minutes, drain well and set aside. Heat oil in large saucepan, cook leek, garlic, bacon for 3-4 minutes. Add carrot, potato, celery, zucchini, green beans, tomato, stock and tomato paste. Bring to the boil, then simmer for 10 minutes. Stir in cooked pasta and borlotti beans and heat through. Spoon into bowls and garnish with parsley and parmesan.
