Easy to make. Keeps well for several days in an airtight tin.

Ingredients
  • 60z soft margarine
  • 6oz caster sugar
  • 6oz golden syrup
  • 2 large eggs
  • 2oz ground almonds
  • 1oz cocoa, sieved
  • 7oz plain flour
  • 1/2 level teaspoon bicarb dissolved in 1/4 pint milk
  • grated rind of i large orange
  •  
  • ORANGE BUTTER CREAM
  • 3oz soft margarine
  • 8oz icing sugar, sieved
  • 3 tablespoons orange juice

Directions
Heat oven to 300F ,150 C. Grease and line a tray bake tin about 12 x 8 ins (I use a 9x9 tin and it works okay ) Put all ingredients in a large roomy bowl and beat well with an electric mixer. Turn into tin, smooth top and bake until firm and springy when lightly pressed. Leave to cool in tin then turn out and ice with orange butter cream. Cut into squares and decorate if desired. I use grated plain chocolate.
