Lovely omelette with courgette, olive, feta cheese and basil

  • 1 hungry main or two lunch snack
Ingredients
  • 2 large eggs
  • 2 small yellow courgettes
  • 7 or 8 feta cheese chuncks
  • if fresh handful of chopped basil or a good sprinkle of dried
  • 4 halved olives
  • 1 clove of garlic, chopped
  • 1tsp olive oil
  • salt and black pepper
  • small knob of butter

Directions
Melt the butter in a frying pan on a low heat then add the olive oil. Once warm add the courgettes and garlic, mix well then season with salt and a good gring of black pepper. Once lovely and brown beat the eggs until just mixed add to the pan and swirl. Once just set on the bottom sprinkle with the basil, feta and olives. Leave for 2 mins then place under a hot grill for 1 min to melt the cheese. Once melted fold the omellet in half on to it's self and serve with fresh salad leaves or cous cous.
