Pickled strawberry and cucumber salad

Servings
  • Serves 2 as a starter
Ingredients
  • 200g strawberries, hulled and halved
  • ½ a small cucumber, peeled and deseeded and cut into small chunks
  • sea salt and freshly ground black pepper
  • 2 tbsp cider vinegar
  • 2 tsp golden caster sugar
  • 1 tsp olive or rapeseed oil
  • 1 tsp chopped dill

Directions
Put the strawberries and cucumber in a sieve and toss with a good 1 tbsp of sea salt. Leave for 10 minutes then rinse off the salt. Put the strawberries and cucumber in a mixing bowl with the vinegar, sugar, a few twists of black pepper, oil and the chopped dill. Toss together and leave to stand for 10 minutes to allow the flavours to develop. Serve the salad trickled with the juices from the bottom of the bowl.
