A well earned treat after a cold halloween night. a yummy soup that goes well with a poopy seed roll.

  • 3lb pumpkin
  • 2tbsp olive oil
  • 2 large onions, finely chopped
  • 8oz carrots, finely chopped
  • 1 1/2 lb tomatos, chopped and deskined (also can use can tomatoes if prefered)
  • 2 litres of chicken or veg stock which ever prefer
  • jucie of 1 lemon
  • 1/4 tsp netmeg
  • 1 tsp salt
  • fresh ground black pepper
  • 4 oz red lentils
  • 1/2 pint milk
Chop the pumpkin and romove skin this should leave you with around 1 1/2lb of chopped pumpkin. Heat the oil in a deep saucepan. Then add onions and the carrots, gently cook till onions are soft but not browning. Add the pumpkin, tomatos, stock, lemon juice, nutmeg, salt and pepper and the lentils. Bring to the boil, then reduce the heat and cover. Simmer for about 35 mins Remove form the heat and allow to cool slightly, Once cooled purree it with a food prosseor or a hand blitser Once to the desired form retern to the heat, add the milk and season to your taste. Heat for 5- 10 mins then serve great with a bun or homemade bread .
