Quick Courgette, mushroom & parma ham pasta, with parmesan, red onion, creme fraiche & basil. Perfect for a midweek supper.

Ingredients
  • 150-200g pasta shapes (I normally use bows)
  • 1 red onion, diced
  • 150g creme fraiche (I use low fat)
  • olive oil
  • 1 large courgette, sliced
  • 8-10 button mushrooms, sliced
  • 6 slices parma ham, chopped
  • 1-2 tablespoons fresh, torn basil
  • 100g parmesan, finely grated

Directions
cook the pasta as pack instructions. heat a tablespoon of olive oil in a large frying pan and fry the onion over a medium heat until softened and lightly browned. add the mushrooms and courgettes and cook for 4-5 minutes. reduce the heat and add the creme fraiche and pasta. Stir well, then add the parmesan, parma ham, basil and season with black pepper. serve with a little moe parmesan and a couple of basil leave.
