Rhubarb and Orange smoothie
Rhubarb and Orange smoothie
added by HughFW

Smoothies are great for fruit-shy adults and children alike, packing a satisfyingly high dose of goodness into a single glass. Be lead by what’s seasonal. Rhubarb is very much February’s fruit.

Servings
  • Two
Ingredients
  • Two to three rhubarb stalks, about 175g, cut into lengths of 2cm
  •
Finely grated zest and juice of two oranges

  • Three to four teaspoons of honey

  • Three to four teaspoons of plain yoghurt
, , ,
Directions
Put the rhubarb in a pan with orange zest and juice, honey and two tablespoons of water. Stir over a low heat until the honey dissolves.

Cover the pan and stew the rhubarb very gently for around eight minutes, until it softens. Add a little water if it starts to look dry.

Switch off the heat and leave to cool completely (you can of course prepare the rhubarb a day ahead and keep it chilled overnight).

Put the rhubarb mixture into a blender with the yoghurt and whiz until smooth. Taste and add a little more honey, if you like.

Pour into a glass and drink straight away. You can find ‘Rhubarb and orange smoothies’, and many other recipes like it in my my latest book ‘Every Day‘, available from the River Cottage online shop, here on the website. Each copy is exclusively signed by myself
