A delicious cake that is moist and keeps well if you can manage to keep it to yourself!!

  • Cake:
  • 175g grated carrots
  • 2 ripe bananas, mashed
  • 75g chopped walnuts
  • Zest of one orange
  • 175ml sunflower oil
  • 175g soft brown sugar
  • 3 large eggs
  • 300g plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • 2 tsp baking powder
  • Icing:
  • 100g soft curd cheese
  • 100g softened butter
  • 210g unrefined icing sugar, well sieved
  • ½ tsp vanilla essence
  • Small handful of chopped walnuts to decorate if you wish

Mix the carrots, bananas, walnuts, orange, oil, sugar and eggs in a large bowl. Sieve the flour, bicarbonate of soda, salt and baking powder and gently mix into the carrot mixture, making sure that all the flour is incorporated without being over-mixed. Pour into two 20cm round baking tins, lined with buttered greaseproof paper. Bake for 25 minutes at 180 degrees C until firm to the touch and a skewer comes out clean. Leave to cool on a rack. For best results, wrap in foil before totally cold and ice the next day. Soften the curd cheese and add the butter and continue mixing until they are totally mixed together. Gradually add the sieved icing sugar and beat in until smooth. Add the vanilla and beat again. Divide the icing over the 2 cakes, layer up and if you wish sprinkle with chopped walnuts. Enjoy!!
