A good, tasty sausage casserole which doesn't take too much prep and can cook either all day when you are out or even overnight in the slow cooker.

Ingredients
  • 1 tsp olive oil

  • 1 pack decent sausages, chopped into bite sized pieces
  •  
  • around 10 small new potatoes
  •  
  • 1 onion, chopped
  •  
  • 2 carrots, chopped
  •  
  • 1 leek , sliced
  •  
  • 2 cloves garlic, chopped
  •  
  • 1 tbsp plain flour
  •  
  • 1 glass red wine
  •  
  • 1 tsp tomato puree
  •  
  • 300 ml nearly boiling stock

Directions
Sausage Casserole 1. Parboil potatoes for 5 mins or so while getting on with the rest of the preparation (this isn't needed if they are really small, but I always err on the side of caution) 1. Heat oil, add sausages and brown on a medium heat. Put sausages into the slow cooker. 2. Drain off most of the fat, add onion and fry for about 5 mins. Add carrot, leek and garlic and fry another few minutes to soften. Sprinkle the flour over and stir (this will thicken the sauce a little) and add the wine. Stir to get any brown sticky sausage goo off the bottom of the pan. Add tomato puree and add to the slow cooker. 3. Stir in the stock and season. If your slow cooker has an auto setting, then put it on auto and leave for around 6-8 hours. If not it's best done on high for the first hour and then switch to low for the rest of the cooking time. Or cook on low for 8 - 9 hours and heat the toms and stock in the pan with the garlic and pepper before adding to the SC. Some newer SCs seam to run a little hotter than the old ones, so cooking times may differ depending on which model you're working with.

I wondered that too about the potatoes. It also says about adding tomatoes and peppers too but no mention in the recipe ingredients list!

I'm going to try this tomorrow nite can't wait. Does anyone know when I should add the potatoes to the slow cooker?
