A rich, smokey soup, with a wonderful deep green colour,

  • Approx 6 portions
  • 1 Smoked Widgeon (roasted)
  • 2lb Potatoes
  • 3 Leeks
  • 3 Onions
  • Large bunch of Chard
  • 1.5 litres Chicken Stock
  • Pinch of Rock Salt
  • Black pepper (to taste)

Chop vegetables and place all ingredients, (except the Chard), into a large pan. Bring to the boil, then reduce heat and simmer for 30 mins. Remove Widgeon from the pan and take of all the meat. Return the meat to the pan, add the chard, and simmer for a further 5 mins. Remove pan from heat. Blitz contents in a belnder until thick and smooth. (Leaving the chard until the last few minutes helps keep it's vibrant colour).
