deliceous courgette curry with cocunut creamy finish - made with a variety of courgettes and a squash. the yellow courgette is important as it retains a firmness, while the other courgettes cook down to create a thick body to the curry. Serve with indian bread and chopped corriander leaf

Ingredients
  • 5 courgette in total all meduim in size
  • 1 round courgette
  • 2 green courgette
  • 2 yellow courgette
  • half a butternut squash
  • 1 onion
  • 1 pepper
  • 1 tea spoon turmeric
  • 1 tea spoon garam masala
  • cardamon ground in mortice
  • chilli - chopped small and deseeded
  • 2 garlic cloves
  • 1/2 tsp ground coriander
  • 6 plumb tomatoes (3/4 pound)
  • creamed coconut milk
  • salt and pepper to taste

Directions
sweat onion down to transparent chop and fry off garlic fry off chilli remove tomatoe skins and chop into chunks - add to pan with onions and heat through until tomatoes start to break down. add in all remaining spices transfer this mix to a casserole dish cut round corgette to very small pieces sweat off and add to the casserole dish cut butternut into mouth sized chunks - fry off and add to casserole cut green courgette in slices and then in halves Cut yellow courgette into chunks. fry off lightly and add to casserole mix all ingredients together to coat and cook for 50 mins at 160 C add in creamed coconut and cook further 10 mins
