I came up with this idea when I had some leftovers from a Taco Meal and a giant ball courgette. However it was so nice that I have made it since from fresh. Where possible all ingredients are home grown or from my veg box. I grow the yellow courgettes every year, some people say they are lacking in taste compared to the green ones but I love them all. The best thing about the yellow ones though is you can see when one has grown; they don't get lost in a sea of green leaves! Just a question about the posts here do I have to tag all the relevant ingredients in one recipe for the seeds of change comp? I could make this with Borlotti Beans I suppose, but I have not grown any so it's too late for this year! This recipe was invented before I saw that advert. Also I don't think the browse button for adding a picture is working, I'll check back later to try to add this.

Ingredients
  • 4 Large Ball Courgette
  • 1 Star Anise
  • ½ tsp Mustard Seeds
  • 1 tsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • ½ tsp Turmeric
  • 200g Lamb minced
  • 50g Pork Belly minced
  • 1 Large Onion finely chopped
  • 4 Cloves Garlic finely chopped
  • 1 Large Red Chilli sliced
  • 1 Carrot finely grated
  • ½ Red Pepper finely chopped
  • 1 Tomato finely chopped
  • 1 handful Basil finely chopped
  • 1 handful Parsley finely chopped
  • Ground Black Pepper
  • Salt
  • 200g Greek Yogurt
  • 100g Feta Cheese

Directions
Method: Preheat the oven to gas 5. Grind all the spices together in a pestle and mortar. Gently cook the onions until soft and then add and brown the mince. Next pop in the garlic, carrot, pepper, tomato and spices then cook for 5 minutes. You want the mixture to be quite dry as the courgette will impart a lot of juice. Stir though the basil and parsley in the last minute and season. Slice the top of the courgette off like a lid and remove the seeds. Mix the yogurt and crumbled feta cheese together and spread evenly around the edge of the center of the courgette, then fill with the mince mixture. Pop the lid back on and hold into place with some soaked cocktail sticks to retain the moisture. Bake in the oven for 1 hour or until the skin gives slightly under pressure.
